COMPARATIVE EVALUATION OF THE PHYSICO-CHEMICAL PROPERTIES OF Icacinatrichanthaoliv. TUBER STARCH WITH THOSE OF SOME INDIGENOUS STAPLE CROPS
Abstract
Wild Icacinatrichanthaoliv. (ITO) tuber [family Icacinaceae] was harvested and processed. The physicochemical properties of the tuber was determined and compared to those of maize, sorghum, cassava, millet and potato as recorded by different authors. Proximate analysis on the tuber gave starch yield of about 61% which is slightly off white in colour and starch granule size of 4-15µm range. Protein, carbohydrate, fat, fiber and ash composition were 0.75%, 71.13%, 0.87%, 6.86% and 2.96% respectively. The physicochemical properties of the starch were gotten as follows: water absorption capacity (214.3%), swelling power at 84oC to 95oC (25-65%), moisture content (7.5%), gelatinization temperature (73oC) and amylose content (10%).
